This recipe is inspired by the one made by Bethennny Frankel on TikTok. The salad is high on protein, low on carbs and big on flavour, but best of all, it takes no time at all to make, and tastes delicious, so give it a try and let me know what you think.
- For the wrap, I use a low-carb tortilla but you do you. Warm up in the oven for a minute or so, then smear on smooth low-fat cottage or cream cheese.
- Load up with a handful of sprouts and micro greens. These have so much goodness in them and add a delicious fresh crunch to every mouthful.
- For the tuna salad, mix a tin of tuna and a selection of veg. I throw in whatever I have in my fridge: carrot, pickled onions, cucumber, jalapenos, spinach or kale – it all tastes good! Note: chicken also works if you’re not into tuna.
- Then, because I’m in my gut health era, I add a good dollop of sauerkraut.
- Next, a squeeze of mustard and a teensy bit of mayo.
- Whizz it all together in the food processor, then fold it into the salad wrap and enjoy with a healthy beverage. (Or, if you’re me, a glass of chilled white wine. 🤩 Ching ching!)
